Babich Family Estates Headwaters Organic Block Sauvignon Blanc 2011
Our Headwaters organic block is fully certified and is farmed in compliance with organic standards. First made in 2009, this crisp dry Sauvignon Blanc is produced from grapes grown on the organic block in Marlborough and vinified in compliance with organic standards.

Production Notes:
Fruit from our certified organic block within the Headwaters Vineyard were harvested on the 5th of April. The grapes were quickly crushed and pressed into stainless steel tanks where the juice was fermented at controlled cool temperatures to capture the intense varietal flavours. Strict organic procedures where followed at all times. The wine was bottled soon after completing fermentation.

Tasting Notes:
This is the third vintage from our Headwaters Estate Organic block and the resulting wine goes from strength to strength. The nose displays orange blossom, grapefruit and lemonade with floral notes graced with a touch of minerality. The palate is elegant and complex with lime, again grapefruit and a hint of spice. There is a lush texture to the wine with an unfolding herbal/mineral component, creating both a tight and delicious wine. From our historic bottling of this parcel we see improvement with time, this vintage will be no exception with an exciting future.

"Bright, very pale straw colour with a clear rim, the nose is fresh, vibrant and full of passionfruit, nectarine and lime fruit aromas, complexed by white floral and flinty elements. Dry on palate, the flavours of passionfruit, limes, and gooseberries are lifted by tropical fruit notes and fill the mouth. Soft and very smooth, the acidity is seamless, and the finish delicate and nuanced. Balance and harmony with the array of flavours are the features of this wine. Serve with Thai, Vietnamese and Japanese cuisine over the next 2 years."

"Produced from organically grown grapes and vinified under New Zealand organic principles, the 2011 Headwaters Organic Block Sauvignon Blanc has moderate to intense aromas of lemon peel, lime juice and straw with suggestions of fresh grass and dill seed. Medium bodied, citrus flavors fill the mouth countered by a crisp acid backbone, finishing long and clean. Drinking now, it should keep fresh through 2013."
