Production Notes:
Fruit from our certified organic block within the Headwaters Vineyard were harvested on the 5th of April. The grapes were quickly crushed and pressed into stainless steel tanks where the juice was fermented at controlled cool temperatures to capture the intense varietal flavours. Strict organic procedures where followed at all times. The wine was bottled late in August 2009.
Tasting Notes:
The nose is subtly perfumed with red current and passionfruit. The palate has a soft and sweet fruited entry nice weight and is finely structured – making it a good food match. Juicy fruits are found on the mid palate and the finish is dry. Should develop nicely in the medium term.

This stylish sauvignon blanc is made from organically grown grapes from a single vineyard. Look for a lightness of touch in the fruit, which is nonetheless solid and well focused. The flavours are nicely paired with a consistent broad ribbon of acidity, lending the wine a juicy texture that makes it friendly to food. Friendly? It loves food, especially white fish, seafood, oysters and other shellfish.
